Beer-Batter Fish [2]

Fish Suitable
Shark, Whiting, Garfish, Flathead, Snapper, Mulloway, Trevally, Cod, Coral Trout
Cooking Utensils
Wok or Deep Pan, Metal Tongs, Spatula
Cooking Time
5-10 minutes
Ingredients
- 1 cup of plain flour
- A pinch of salt
- 60gms of melted butter
- 2 eggs, lightly beaten
- 1 cup of beer (full strength not light)
- 1 egg white, stiffly beaten
- Extra flour as needed
1. | Stir flour through butter and eggs. |
2. | Gradually add beer and stir until smooth. |
3. | Cover and stand for one hour in a warm place. |
4. | Just before using, fold in the egg white. |
5. | Flour fish and coat with batter. |
6. | Cook in 5 mms of hot extra virgin olive oil for two to four minutes on each side. |
The main difference I have noticed between this batter mix and Beer-Batter Fish [1] is the folding of the egg white into the mixture. This supposedly allows for a much lighter batter.
